Cheesy arugula-spinach egg bake

Eggs are good for your eyes! Lutein and zeaxanthin, two nutrients found in egg yolks, work together to reduce your risk of developing cataracts.

Ingredients

nonstick cooking spray
1 1/2 cups fresh arugula
2 1/2 cups fresh baby spinach
10 large eggs
1 cup fat-free milk
1/4 teaspoon freshly ground black pepper
1/2 cup reduced-fat cheddar cheese

Directions

  1. Preheat oven to 350 F. Spray a 9-by-11-inch baking pan with nonstick cooking spray.
  2. In a large bowl, toss arugula and spinach together. Dump into prepared pan.
  3. In a medium bowl, whisk together eggs, milk and black pepper. Pour over arugula and spinach mixture, making an even layer. Sprinkle cheese on top.
  4. Bake for 25 to 30 minutes or until eggs are set.
  5. Cool slightly, cut into 3-by-3-inch squares and enjoy warm.
