    Zesty cucumber refresher Heart Smart Low Sodium

    Limes are an excellent source of vitamin C. Vitamin C helps your immune system stay strong!

    Ingredients

    1 medium English cucumber
    1/2 medium jalapeño pepper
    2 cups unsweetened 100% pineapple juice
    3/4 cup sugar
    2 medium limes (juice only)
    4 cups water

    Directions

    1. Place cucumber and jalapeño pepper in a blender. Blend until smooth.
    2. Position a fine-mesh strainer over a large bowl. Pour blended ingredients through the strainer, catching the liquid in the bowl. Push down on solids in the strainer with a spatula or spoon to squeeze out all liquid. Throw away solids left in the strainer.
    3. Pour liquid from the bowl into a pitcher. Add pineapple juice, sugar and lime juice. Stir.
    4. Place ice cubes in 8 glasses. Pour 4 ounces of water in each glass. Then, fill remainder of each glass with juice mixture. Stir slightly.
    5. Serve chilled.

    Makes 8 servings
