Recipe: Fruit and quinoa salad

  • This highly nutritious seed is often called a super food, and is usually categorized and cooked like a grain.
  • Quinoa is gluten free and is considered a complete protein.
  • Cooked quinoa has more fiber than either brown rice or corn.

This easy, healthy salad is good for your heart, is gluten free, and low in sodium. Its bright, beautiful color is a hint that it contains antioxidants, which help reduce your risk of cancer. You can also add other seasonal fruits to this salad such as kiwi, cantaloupe, peaches, raspberries or watermelon. Makes six servings.

Ingredients

3 tablespoons freshly squeezed lime juice
3 tablespoons honey
2 tablespoons fresh mint
1/2 tablespoon chopped fresh basil
2 cups cooked quinoa
1 1/2 cups fresh blueberries
1 1/2 cups fresh strawberries, stems removed and sliced

Directions

1. In a small bowl, whisk together lime juice, honey, mint and basil.
2. In a large bowl, combine remaining ingredients. Add dressing (made in step 1) and toss until well-coated.
3. Enjoy!
