Turkey burritos
Whether it's for school or work, packing your lunch can save money and help you eat better. These wraps are a nice change from sandwiches on plain bread.
Ingredients
½ cup light mayonnaise
2 teaspoons taco seasoning mix
6 six-inch flour tortillas (Whole wheat tortillas* can also be used.)
2 ounces shredded low-fat cheddar cheese
½ pound sliced turkey breast luncheon meat (For lower sodium, you can use fresh roasted turkey breast.*)
1 large tomato, thinly sliced
leaf lettuce
Directions
- Combine mayonnaise and seasoning mix.
- Spread on each tortilla and sprinkle with cheese.
- Layer with turkey, tomato and lettuce.
- Roll up tortilla. You can serve right away, or secure them in plastic wrap.
Options for packing a healthful lunch*
You can build on the tortilla idea and add ingredients that you choose for different lunches.
- Tuna salad with lettuce and tomato seems more fun in a burrito than on bread.
- If your family is interested in vegetarian meals, pack the tortillas with lettuce, cucumber, tomato, shredded carrot and some humus.
If your kids like to take chips or similar snacks in their lunches, see if you can find some that don’t contain hydrogenated fats. Look for potato chips that use olive or canola oil, for example. Pretzels are another option. Health food/whole food stores often sell snack foods made from the healthier fats.
