Spiced rubbed salmon

4 6-ounce salmon fillets
1/3 teaspoon salt
1 teaspoon ground coriander
1 teaspoon ground cumin
1/2 teaspoon paprika
1/8 teaspoon ground cinnamon
1/4 teaspoon ground black pepper
1 1/2 cup thinly-sliced onion
1 tablespoon olive oil


  1. Preheat oven to 400 degrees Fahrenheit.
  2. Combine salt, coriander, cumin, paprika, cinnamon and pepper in small bowl. Rub spice mixture evenly on one side of the salmon fillets.
  3. Spray an 11x7 baking dish with nonstick cooking spray and place onion slices in baking dish. Drizzle with olive oil.
  4. Place the salmon fillets on top of the onions and bake at 400 degrees Fahrenheit for about 20 to 25 minutes or until fish flakes easily when tested with a fork.
  5. Serve warm.

Makes 4 servings.
