Raspberry yogurt salad
This chilled gelatin and yogurt mix helps lighten those heavy, hot summer days.
Ingredients1/2 cup water
1 box (0.44 ounces) sugar free raspberry gelatin mix
1 tablespoon lemon juice
2 cups plain low fat yogurt
Directions
- Bring water to a boil. Add raspberry gelatin mix and lemon juice. Stir until dissolved.
- Pour mixture into a bowl and chill in refrigerator for 30 minutes or until partially gelled.
- After 30 minutes, remove gelatin from refrigerator.
- Beat yogurt into gelatin mixture.
- Pour into mold or 1/2 cup individual serving dishes.
- Let chill until serving time.
