This simple side dish may not use a lot of ingredients but it’s packed with good-for-you nutrients!
3 large potatoes, washed and cut into 1-inch pieces
1 medium onion, chopped
2 tablespoons olive oil (You can also use canola oil or peanut oil.*)
2 cloves garlic, minced
1/4 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon paprika
Combine all ingredients in a 3-quart, microwave-safe casserole dish. Cover with lid or plastic wrap.
Cook in microwave for 15 to 20 minutes or until potatoes and onions are tender, stirring several times.
Remove from microwave and let stand for 5 minutes.
