Potatoes lyonnaise
Whip up a great-tasting, healthful side dish in 20 to 25 minutes.
Ingredients3 large potatoes, washed and cut into 1-inch pieces
1 medium onion, chopped
2 tablespoons margarine
2 cloves garlic, minced
1/4 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon paprika
Directions
- Combine all ingredients in a 3-quart, microwave-safe casserole dish.
- Cover loosely with plastic wrap, cook on high in microwave for 15-20 minutes or until potatoes and onions are tender, stirring several times.
- Let stand for 5 minutes
