Potatoes are a healthful source of carbohydrate, providing fiber, potassium and other nutrients just be sure to choose your toppings wisely too!
nonstick cooking spray
6 small russet potatoes
1/3 cup extra-virgin olive oil
1 teaspoon no-salt garlic and herb seasoning
Optional toppings:* salsa, sour cream, shredded cheese, crumbled bacon, chili, beef stew, guacamole, chopped chives or butter
Preheat oven to 375 F.
Spray a baking sheet with nonstick cooking spray.
Pierce each potato with a fork and brush lightly with olive oil. Bake for 40 to 45 minutes.
Cut each potato in half and scoop out middle, leaving about 1/4 inch of potato attached to skin. Brush inside of each potato with olive oil and sprinkle with seasoning. Return to oven to bake for another 10 to 15 minutes.
