Marinated vegetable salad

Enjoy this tasty salad! It's a good source of vitamin A and vitamin C for healthy skin and eyes.


1 medium broccoli stalk, broken into florets
1 small cauliflower head, broken into florets
1 large green pepper, cut into 1-inch pieces
1 medium cucumber, sliced
4 medium carrots, pared and sliced
10 cherry tomatoes, stems removed
1 cup Italian salad dressing (You can also use another reduced-calorie salad dressing.*)


  1. In a large bowl, combine broccoli, cauliflower, green pepper, cucumber, carrots and tomatoes.
  2. Toss vegetable mixture with Italian salad dressing to coat.
  3. Cover and refrigerate overnight.
  4. Serve chilled.

*Option not included in nutrition facts.

Makes 6 servings.
