Banana pancakes
This healthy twist on pancakes provides a good source of fiber.
Ingredients2 large eggs
1 ½ cup nonfat milk
1 tablespoon sugar
3 tablespoons oil
2 bananas, mashed
¾ cup whole wheat flour
¾ cup white flour
2 teaspoons baking powder
Directions
- Preheat griddle to 350 degree Fahrenheit.
- Beat eggs in a medium bowl.
- Add in milk, sugar, oil and bananas. Mix well.
- Add flours and baking powder. Mix gently.
- Spray a griddle with non-stick cooking spray.
- Spoon ¼ cup of batter onto the griddle for each pancake.
- Cook until tops are bubbly and pancakes are dry around the edges.
- Flip and cook for 2 to 3 minutes or until golden brown. Serve immediately.
