Baked trout with lime and cilantro

The trout in this recipe is rich in omega-3 fatty acids, which helps protect your heart against heart disease.


2 pounds of trout fillet, cut into 6 pieces
3 tablespoons lime juice (about 2 limes)
1 medium tomato, chopped
1/2 medium onion, chopped
3 tablespoons fresh cilantro, chopped
1/2 teaspoon olive oil
1/4 teaspoon black pepper
1/4 teaspoon salt
1/4 teaspoon red pepper (if desired)


  1. Preheat oven to 350 degrees Fahrenheit.
  2. Place fish in baking dish.
  3. In a separate dish, mix remaining ingredients together and pour over the fish.
  4. Bake for 15 to 20 minutes, or until fork-tender.

Makes 6 servings.
