Mashed sweet potatoes

Sweet potatoes are excellent source of vitamin A, which is important for healthy eyes and skin.

Ingredients

2 pounds sweet potatoes, peeled and cut into 1-inch cubes
2 tablespoons unsalted butter
1/2 cup fat-free half & half
1 tablespoon honey
1/2 teaspoon ground cinnamon

Directions

  1. Place sweet potatoes in a large pot. Add water until covered. Bring to a boil and cook for about 5 minutes, until sweet potatoes are tender.
  2. Place sweet potatoes in a colander. Drain well.
  3. Place sweet potatoes in a large mixing bowl. Add butter and half & half. Mash or beat with a mixer until smooth.
  4. Add honey and cinnamon. Mix well. (You may need to add more half & half if the sweet potatoes are too stiff.*)
  5. Serve warm.

You can cook the sweet potatoes in their skins if you choose same-sized spuds. Peeling the sweet potatoes after they’ve been cooked is easy but be careful not to burn yourself – they’re hot!
