1 large onion, finely chopped2 large cloves of garlic, or more to taste2 teaspoons vegetable oil1 pound very lean ground beef1 28-ounce can low-sodium tomatoes2 tablespoons salt free tomato purée2 1/2 cups cooked kidney beans, drained and rinsed1 or more jalapeno peppers, to taste1 cup diced green peppers1 cup sliced carrots1 cup diced celery1 cup corn kernels (optional*)
5 teaspoons brown sugar5 teaspoons chili powder1 tablespoon ground cumin1 tablespoon oregano1/2 teaspoon salt, or to taste1/2 teaspoon coriander1/8 teaspoon ground cloves1/8 teaspoon ground allspice
