Slow cooker rice pudding with peaches

Seasoning this recipe with cinnamon does more than give it a sweet, warm taste. Eating cinnamon with a high-carbohydrate dish can help lessen its impact on your blood sugar levels. 

Ingredients

Nonstick cooking spray
7 cups 1% milk
1 1/4 cups uncooked white basmati rice
1/2 cup sugar
2 cinnamon sticks
4 cups diced fresh peaches
1 1/2 tablespoons pure vanilla extract
*optional: ground cinnamon

Directions

  1. Spray the slow cooker with nonstick cooking spray. Then let your child add the milk, rice, sugar and cinnamon sticks. Stir. Cover and cook on low for 5 to 6 hours.
  2. Let your child add the diced peaches to the slow cooker. Stir. (You may want to do the stirring this time ― the mixture will be hot!) Cover and continue cooking for 1 to 2 more hours.
  3. Turn off slow cooker. Remove cinnamon sticks and add vanilla. Stir.
  4. Let your child sprinkle a bit of ground cinnamon on top to add color, if desired.* Serve warm.
